Overnight Chia Oats

I’ve been trying to up my fibre intake for absolutely ages, but I’m such a fussy eater! Most of the foods that are high in fibre (beans, lentils, nuts, seeds) are just not my bag and I can’t stand the texture of them.

I was inspired by the queen of goop, @triedandtruerecipes, on TikTok to give her rendition of overnight oats a try, but I couldn’t quite replicate the quantities that she makes until I knew if I actually liked them or not. So, through a little trial and error, I found the quantities I needed for a little 250ml jar – and that’s what I’ve stuck with since!

For the Oat-Chia Base

The base of the recipe is super simple, so it can be adapted to suit whatever flavours your after! For the base, in a 250ml jar, you’ll want:

  • 100ml milk (whichever type you prefer)
  • 30g oats
  • 7g chia seeds

And that’s it! I do a fairly modest serving so there’s plenty of room in the jar to add any toppings or additions you might like. On its own, it is edible, but incredibly bland… which is what makes it the perfect recipe to adapt!

Below, I’ve listed just a few possible additions you can make to the base for some lovely flavour combinations, but you really can’t go wrong to be honest! If the flavours aren’t strong enough for your tastes, add a little more – if you add too much, just neutralise it with some more oats. Experiment a little and find your faves!

Sweet ‘n’ Simple

  • 20g golden or maple syrup
  • 1/2 tsp vanilla extract

Chocolate

  • 8g cocoa powder
  • 20g golden or maple syrup
  • 1/2 tsp vanilla extract
  • Pinch of salt

Strawberry Cheesecake

  • 30g strawberry jam
  • 20g cream cheese
  • 1/2 tsp vanilla extract

Mocha

  • 6g cocoa powder
  • 1 tsp instant coffee or 20ml liquid espresso
  • 20g golden or maple syrup
  • 1/2 tsp vanilla extract

Blueberry Muffin

  • 50g blueberries
  • 15g golden or maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp lemon zest (about half of the surface of a lemon!)

Peanut Butter & Banana

  • 20g peanut butter
  • 40g banana (sliced or mashed, your choice!)
  • 1/2 tsp cinnamon

Tiramisu

  • 1 tsp instant coffee or 20 ml liquid espresso
  • 6g cocoa powder
  • 15g golden or maple syrup
  • 20g cream cheese
  • 1/2 tsp vanilla extract
  • Pinch of salt

Those are just some of the more universal flavours that you can try, but most of my favourites are more seasonal – I’ll be posting about those soon, so keep your eyes peeled if you’re interested!

Once you’ve added what you want, pop them in the fridge and leave (you guessed it) overnight. They’ll last for about 3-5 days, according to google, but I’ve never had any left to actually test this theory to be completely honest with you.

This recipe also, obviously, doubles very well, so you could make one big jar for the week if you wanted! I always get too excited to try new flavours, so I usually just stick to smaller batches…

Anyways, I hope you give these a go because they really are such a handy snack to have in the fridge! They’re great for breakfast, but I honestly really enjoy them as my sweet treat after dinner too if I’m trying to save my more indulgent treats for the weekend.
