As we come into autumn, everything becomes pumpkin spiced – and that’s fine by me. This easy dessert is warm, spiced, and goes deliciously with vanilla ice cream or custard 💕 I’m personally not a fan of the huge introductions that often come with recipes, so, without further ado, here you go babes:
Pumpkin Spice Apple Crumble
Filling
- 2 medium apples (about 280–320g), peeled and sliced
- 1 tbsp light brown sugar
- 1 tsp pumpkin spice
- ½ tsp cinnamon (optional, but I’d absolutely recommend it!)
- 1 tsp cornflour (helps thicken the juices)
- 1 tsp lemon juice
- ½ tsp vanilla extract
Crumble Topping
- 100g plain flour
- 50g cold butter, cubed
- 25g light brown sugar
- 1 tsp pumpkin spice
- Pinch of salt
Method
- Preheat your oven to 180°C fan (200°C conventional).
- Mix the apple slices with the brown sugar, pumpkin spice, cinnamon, cornflour, lemon juice and vanilla.
- Tip the apples into your baking dish and spread them evenly.
- Rub the butter into the flour until it resembles coarse breadcrumbs.
- Stir in the brown sugar, pumpkin spice and salt.
- Sprinkle the crumble evenly over the apples without pressing it down.
- Bake for 35–40 minutes, until the topping is golden and crisp and the apple filling is bubbling around the edges.
- Let it stand for 10 minutes before serving.
Now that I’ve given you what you came here for, I’ll have a little babble.
Lazy Girl Tip
As with most of my recipes, I try to create as little washing up as possible. Therefore, I would suggest adding all the filling ingredients straight into the dish as opposed to mixing them first in a separate bowl – purists may hate me for it, but they’ll have one more bowl to wash so HA.
If you wanted to ‘zhush’ this up a little, I’d imagine some chopped pecans mixed in with the apples would also be lovely, or some Demerara sugar sprinkled on top of the crumble for baking. I personally prefer the recipe as is, but I know some people would appreciate these additions!
In terms of serving suggestions, warm custard is usually traditional with a crumble, but I much prefer vanilla ice cream – I love the contrast of a hot pudding with a cold side dish!
The crumble is also an insanely versatile dessert. Just take pretty much any fruit, sprinkle on some sugar and spices (if you wish), then the crumble is always the same! Popular varieties in my home include apple and blackberry, cinnamon apple, and even peaches to make an easier version of a peach cobbler.
